I ran across a neat little freeware application today called TapDex. It's designed to use with the Mac OS X Address Book, but with Sync Services enabled in Entourage 2004, you can easily create a new email in Entourage using TapDex.
TapDex is a preference pane. You set a hot key (F1 is the default) to bring up the TapDex window.

As you can see, it's a small window that allows you to quickly type in the desired contacts name. I found it extremely quick to use on my G4. Double clicking on the desired email address opens a new email in Entourage. Obviously, Entourage is set to be my default email application.
On free unregistered copies, you will see a line of text at the bottom of the TapDex preference pane as well as the search result window. The text advertises Yellowmug Software's other products. It is unobtrusive you probably won't even notice it. In the Pro version ($4.95), you can turn this option off. The Pro version also gets you the ability to initiate Vonage phone calls from TapDex. Once set up, selecting "Call with Vonage" causes your Vonage phone to ring, pick up the phone and callee's phone will start to ring.
It's free, it's quick, it's unobtrusive....what more can you want?
Sync Services were added to Entourage 2004 in update 11.3.2. This adds a preference that syncs the Entourage Address Book to Apple's Address Book when checked. If you haven't upgraded Entourage 2004, you'll find the latest updates on Mactopia.
